Clink!

A dear friend of mine is hosting a party tonight in Chicago, and although I cannot attend in person I've helped her to find some perfect Champagne Cocktails for her festive fete. Here are the contenders:
  1. Poinsettia Cocktail: Mix 1/2 part chilled Cointreau with 3 parts chilled cranberry juice in a pitcher. Fill a glass 2/3 full then top with Champagne.
  2. Champagne Cider Sparkler: Rim glasses by dipping them into apple cider then into a mix of pumpkin pie spice and either sugar or coarse ground cinnamon. Fill each glass with 3 parts champagne to 1 part apple cider.
  3. Sparkling Pomegranate Punch: Dissolve 3 tablespoons of sugar into 1 cup of pomegranate juice. Add two bottles of champagne and 3/4 cup of white wine (Riesling is a good choice for this punch). Add 2 thinly sliced oranges, 1 cup of diced pineapple, and 1/4 cup of pomegranate seeds. Serve over ice (bonus points if your ice cubes are made of pomegranate juice!). 
  4. Emeril's Champagne Punch: Combine 1 1/3 cups fresh lemon juice, 1 cup sugar, 1/2 cup Grand Marnier, 1/2 cup Triple Sec, 1/2 cup cognac, 1/2 cup fresh orange juice in a punch bowl. Stir until the sugar is completely dissolved. Add two bottles of chilled Champagne and stir to combine. Cover and refrigerate about 1 hour. Garnish with orange slices and fresh strawberries.
