Spring Break Essentials: A Great Beach Read

Friday Favorites


It's the last Friday in March, and I'm wrapping up my Friday Favorites series by dumping out my favorite tote and showing you what's in the bag! I carry my giant Goyard bag almost every day. It was a beautiful souvenir from a recent trip to Paris, and it holds all of these essentials:
  • My computer. Sometimes it's my Macbook Air, but frequently it's the clunky PC that I haul around for work. 
  • Small pouches/bags to keep the little stuff organized. I got this fun ikat print zipper bag from my sister, and I use it to keep track of all the tiny loose items (hair ties, pens, travel-size hand lotion, earbuds, giant paperclips, etc.) in one place. The blue zipper pouch was also a gift, and it's perfect for carrying spare change. Parking meters are everywhere and they eat up quarters so quickly!
  • Snacks. I swiped this Taza bar from Neal's stash, but I always keep something to nibble on. Typically it's a protein bar or a piece of fruit, but I couldn't pass up a bar of dark chocolate!
  • Stamps. I love snail mail, so I keep stamps handy. These floral ones are so cute for spring. 
  • A variety of eyewear. I wear contacts, but allergy season makes my eyes a little dry, so I tote around this tiny sunglasses-shaped contacts case in case I need to swap my lenses for glasses. My Warby Parker frames are usually in my bag too, along with a pair of Colors in Optics sunglasses. 
  • Lots and lots of lipgloss/lipstick. There are only two Bobbi Brown lip colors pictured here, but on any given day I might pull 4-5 different lip products out of my bag. It's extreme, but my lips are rarely dry!
  • My Mason Pearson Hairbrush. This brush has made it onto a Friday Favorites list before, and it's so awesome that it's showing up again. I carry around this handbag-sized version for midday touchups. 
  • A handy pill case. When I'm traveling, it's helpful to carry around some Advil, Benadryl, and Pepto Bismol chewables. This has prevented many late-night drug store runs!
  • Tea. Although I'm a morning coffee drinker, I love tea too. I stash a few tea bags in my tote for any time the mood strikes.

Quinoa "Fried Rice"



I'll admit that I don't cook a ton of asian-inspired food, but we love take-out and I recently reinvented traditional fried rice using quinoa. It was healthy, delicious, and Neal-approved. Read on for the recipe.

What You'll Need:
Olive oil
3 eggs
1 onion, diced
5 cloves garlic, minced
Mushrooms (as many as you'd like!), sliced
1 cup broccoli florets
1 zucchini, chopped
3/4 cup frozen corn, defrosted
3/4 cup frozen peas, defrosted
1 cup of matchstick carrot slices
3-4 cups cooked quinoa
1-2 tsp ground ginger
5 Tbsp tamari soy sauce
2 Tsp Rice wine vinegar (optional)
1 Tsp Sesame oil (optional)
3 green onions, sliced
Sriracha for serving (this is my favorite part!)

Directions:
  1. Cook the quinoa and set aside.
  2. Saute the onions and garlic in a bit of olive oil. I used two turns of the pan (about 2 Tbsp).
  3. When the onions and garlic are fragrant and translucent, add the mushrooms, zucchini, broccoli, peas, corn, and carrots. Continue cooking for about 5 minutes.
  4. While the veggies are cooking, fry the eggs until the yolk is firm and you can slice it into small pieces.
  5. Add the ginger, soy sauce, rice wine vinegar, sesame oil, quinoa, egg, and scallions to the veggies and mix well. Ta-da! Quinoa fried "rice" is ready to eat. 
Note: I served my fried "rice" with a LOT of sriracha and some extra tamari soy sauce. It was super yummy and made for great leftovers the next day!

Topnotch in Stowe, VT

Ski season is coming to an end (hopefully), but I love going up to Vermont in the warmer months to hike and enjoy the outdoors sans-snow. Topnotch Resort & Spa in Stowe, VT is one of my favorite spring/summer destinations (and I'm hoping that Neal and I will get to spend a weekend there this summer!).

At Topnotch, you can cruise Lake Champlain by kayak, enjoy a horseback ride, then head to Flannel for a delicious dinner and s'mores by the campfire. If this sounds a little too rustic for your taste, Topnotch has a full-service spa to melt your stress away, and Stowe is full of art galleries and shops worth exploring. You can even enjoy some live music and true mountain-resort nightlife at local spots like The Matterhorn and Piecasso.

Carrot Cake

We're having dinner with Neal's parents tonight, and I hate showing up empty-handed, so I'm bringing along these yummy carrot cake cupcakes. Carrot cake is probably my favorite type of cake. I don't just love the carrots, I love the cream cheese frosting! Read on for the recipe.

What You'll Need:
3 cups sugar
1.5 cups vegetable oil
4 eggs
1 Tbsp vanilla
3 cups Gluten Free flour
1 Tbsp baking soda
1 Tbsp ground cinnamon
1 tsp salt
1.5 cups walnuts, chopped
1.5 cups grated sweetened coconut
3/4 cup crushed pineapple in pineapple juice
6 carrots
1 blocks of Philadelphia cream cheese (8oz.)
2 sticks of butter
4 cups Confectioner's sugar
Extra vanilla

Directions:
  1. Combine the sugar, vegetable oil, eggs, pineapple, and vanilla. Mix well. These are your wet ingredients.
  2. Pulse the carrots in a food processor until they are almost pureed. 
  3. Combine the flour, baking soda, cinnamon, salt, carrot puree, walnuts, and coconut. These are your dry ingredients. 
  4. Add the dry ingredients to the wet ingredients, mixing until combined.
  5. Pour the cake batter into 2 greased cake pans or cupcake pans. This recipe made about 2.5 dozen cupcakes for me. 
  6. Bake at 350 degrees for about 30-40 min or until a toothpick comes out clean. 
  7. While the cupcakes cool, whip up the frosting by combining the softened 2 sticks of butter and 1 block of cream cheese in a mixer. Add the confectioners sugar (and vanilla if you desire) until it tastes just right. There's no science to this part, just make it taste good!
  8. Frost the cupcakes when cool and enjoy.

Friday Favorites

I'm looking forward to spending some time with family this weekend, but before I go, here are some of my favorite things (this week):


The Lo & Sons OG Bag. Although I already have an amazing tote for work, this bag blows my mind with it's organizational capabilities. It's on my wish list! 


The "This Is My Happy Hour" Tank Top, from Etsy.com. I've been on a major exercise kick lately (fueled by a fitness challenge at work), and I'm definitely adding this top to my workout gear rotation.


Taza Chocolate. Neal and I visited the Taza factory last weekend, and this stone-ground confection can't be beat. The salted almond flavor is my favorite, but I'm also loving the new crispy peanut bar.
The Spoonk Mat. This one looks a little bizarre, but it's totally awesome. Accupressure is a great way to relieve sore muscles, whether they're the result of exercise or slouching over a computer all day.


Caitlin McGauley. Her watercolors are fresh, fun, and include so many of my favorite things!

Etiquette: Dining Out

Today is the first day of spring and as we all come out of hibernation mode, I'm expecting a lot more dates and dinners out. If it has been a while since you were wined and dined, brush up on some tips for ladylike behavior:
  • Arrive with a smile. Greet the host or hostess, and be gracious when they tell you there's a wait and offer to put your name on a list. Restaurants get busy, so there's no need to make a fuss (or even a grimace) when they tell you they can't seat you for an hour. It's up to you to decide if the wait is worth it. 
  • Take a seat. At the table, place your purse at your feet. If you're carrying a small clutch, it's also appropriate to place it in your lap, but no bag should be hung on the back of a chair or placed directly on the table. Similarly, remind your date to keep his wallet, keys, and phone in his coat pockets, not next to his plate.
  • Use your napkin. Once you've been seated, place your napkin on your lap with the crease facing you. If you get up to leave throughout the course of your meal, fold your napkin and place it to the left of your place setting. 
  • Remember your manners. Often people forget basic manners when it comes to waitstaff. Be polite, look them in the eye when you order, and use "please" and "thank you." These basic manners that your parents taught you still apply!
  • Go slow. Take normal sized bites, chew your food, and go slow. There's no need to inhale everything on your plate, even if it is incredibly delicious. When you're not stuffing your face, you'll have more opportunity to make conversation (nobody likes it when their date talks with their mouth full!). 
  • Turn down the volume. Pay attention to the volume of your voice. You don't need to overpower the conversations happening at other tables near you. Likewise, if you're in a quiet restaurant, it might be appropriate to turn the volume down on your cell phone ringer and tuck it away. 
  • No phone calls. You've turned down the volume on your phone and tucked it away, so keep it there! Unless you receive an extremely urgent text or call, please enjoy the pleasure of your date's company and go tech-free during dinner.

I'll admit that running isn't always my favorite activity, but after months of cold weather I'm anxious to take my workouts outdoors. If you're like me and can't wait to run outside, make sure you've got the perfect pair of kicks ready to go. Spring is right around the corner!

Not sure how to choose the right ones? Here are the basics:
  • Know your feet. If your feet roll inwards (over pronate), then choose shoes with extra stability and motion control. If your feet roll the opposite way (under pronate), then choose shoes with a lot of flexibility and cushioning. Note that high arches often lead feet to over pronate and flat arches have the opposite effect. 
  • Know the road. What surface will you most likely run on? If you're running on sidewalks or roads, lightweight shoes with cushioning will be just right. However, if you're more likely to be running trails, you might want a shoe with more stability and traction. 
  • Know where to go. Skip department stores and head to a place that specializes in running shoes. Often, they'll have you run on a treadmill to test the shoes and the pronation of your feet, so you'll walk away with a more appropriate shoe for you. Try to swing by after work or at the end of the day, when your feet are at their largest. 
Tip: It can be difficult to walk out of the store with a shoe that didn't catch your eye on the shelf, but what looks good might not be the best fit for your feet. I've learned this lesson time and time again- make sure you find a shoe that will help you perform at your peak, even if you sacrifice a few style points. Happy Shopping!

Think Green


Happy St. Patrick's Day! I'm starting today off with something green and delicious- a kalicious smoothie from Whole Foods. Packed with healthy greens like spinach and kale, this smoothie gets a little bit of sweetness and an extra boost of vitamins from apple, banana, and lemon.  If you're interested in making one at home, try this copy-cat recipe from That Organic Girl:

What You'll Need:
3-4 large kale leaves (removed from the center vein)
1 cup of spinach (packed down... get lots in there!)
1 1/2 cup of fresh apple juice (try to find some that's not from concentrate)
1/2 lemon, peeled
1 banana
8 ice cubes

Directions: 
  1. Put everything in a blender and blend to the consistency you like it. 
  2. Pour it into a glass and serve it with a straw. Cheers!

Happy Housewarming

When a close friend has just moved into a new home, it's nice to send/give a small housewarming gift. Even if they're not having a housewarming party, a thoughtful note a small gift is a nice way to congratulate them on their milestone (especially if they've purchased their first house!). Below are some of my favorite housewarming gift picks.


From left to right:

  • Beer Tote. Carry this wooden tote full of interesting artisan beers and make a toast to your friend's new place! The tote can be reused when your friend wants to carry a few beers over to their neighbor's backyard BBQ.
  • DIY Ice Cream Sundae Basket. Fill a basket/box with cones, sprinkles, candy toppings, fudge, and caramel. Don't forget to bring the ice cream! This housewarming gift will be a big hit with ice cream lovers and families alike. 
  • Rewined Candles. Soy wax is poured into containers made from reused wine bottles and the scents mimic your favorite vintage. Try the chardonnay scent- it's yummy!
  • Plants. An awesome plant (try succulents-they last a long time with minimal maintenance) will help to make a house feel like a home. 
  • DIY Deluxe Bucket. Fill a big metal bucket with practical tools for home repair. A power strip, level, wood glue, nails, measuring tape, flashlight, magic erasers, and some 3M sticky tape will come in handy!
  • Favorite Throw. A cozy blanket will be well-loved by the new homeowners, plus it's a classic item that goes with almost any decor.

Dining Guide: Orlando

Orlando conjures images of Mickey Mouse, family-friendly hotels, and chain restaurants, but visitors can still savor gourmet bites if they know where to look.

My sister and I recently made the trek to Universal Studios (to visit The Wizarding World of Harry Potter), but when the sun went down we left the theme parks behind and headed to Winter Park, which is becoming a serious-restaurant hub in the Orlando area. We dined at Cask & Larder, tasting delicious cobia, blacked red fish, and roasted Brussels sprouts topped with chili flakes and sorghum. The cocktails were top-notch at this southern-inspired brewpub, but you'll probably want to have a glass of their beer, brewed in house. The vibe is fun and casual, however, if you're looking for a more impressive gastropub, you can head to their sister restaurant: The Ravenous Pig. Chef-owners James and Julie Petrakis (also 2013 James Bead Award nominees) serve up dishes like Creekstone Ribeye Tartare, a Pork Porterhouse with mustard-tarragon mornay, hand made cavatelli on their seasonally-inspired menu.

If you're ready to head downtown, try K Restaurant in Orlando's College Park neighborhood. You'll find creative American fare, plus some Italian specialties, at this restaurant located in a reputedly haunted 1930s-era bungalow. The Rusty Spoon is another downtown winner, featuring locally-sourced American favorites for locavores and foodies alike.

Sip & See

I haven't tried the baby-making thing for myself, but I have several friends with little ones on the way. I'd imagine that the first few days with a newborn are exhausting and wonderful, but a constant stream of visitors just gets in the way of  new baby bonding. I love this idea of a "Sip & See" to introduce a new baby to all of your friends after you've had a few days to recover and develop your own routines as a family (plus, parties are fun!).

The party pictured above was coordinated by Elizabeth Duncan Events and featured on Style Me Pretty. If you're ready to host a little shindig to show off your new love, remember to:

Pick a Theme/Decor:
  • Since the party pictured above was for a baby girl, pink, hearts, ruffles, and flowers were a must. I think a pink tulle ballerina theme would also be adorable. 
  • If your little one is of the male persuasion, check out this post for some more masculine inspiration. I love the idea of adding formal touches like champagne and baby-sized bow ties to an informal affair.
  • Fresh flowers will brighten up the space, but there's no need to go overboard. Place a few small arrangements throughout your home (if that's where you're hosting). I love bouquets of pink peonies or blue hydrangeas- both blooms are bulky so you don't need too many of them to make beautiful arrangements.

Serve Snacks:
The purpose of this party is for everyone to meet the newest addition to your family, not for you to host a full-blown dinner party! Choose snacks and drinks that are easy to prep and go with your theme. Here are a few ideas:
  • Make it a tea party and serve coffee and tea in vintage tea cups. Serve up cucumber sandwiches, small scones, and other bite-size confections. 
  • Have a grown-up milk and cookies bar. Tempt your guests with a variety of cookies, brownies, and bars. Serve them with milk, chocolate milk, and a few "adult" drinks like Kahlua & cream or salted caramel milkshakes with a bourbon float. 
  • Make it manly (think bow ties and beer) and serve craft beers, pretzels, and other salty snacks like potato chips. This option is casual and super easy to prepare, which will give you more time to focus on decor and that new baby!

Confetti Chicken Pasta

I'm always looking for ways to sneak more veggies into my meals (see my Eat More Veggies post), and this recipe has tons of delicious broccoli, red pepper, asparagus, and tomatoes. It's a winner in my book, and Neal approves too. We've made it a few times, and it has another amazing attribute: minimal dishes! Try it tonight for dinner.

What You'll Need:
1 lb. GF penne or rigatoni noodles
2 tbsp olive oil
1 boneless, skinless chicken breast, cut into small cubes
1/4 tsp salt
Fresh black pepper
1 small yellow onion, diced
3 cloves garlic, minced
1 yellow bell pepper, cut into long thin slices
1 red bell pepper, cut into long thin slices
1 c. broccoli florets
1 c. asparagus, chopped into 1" pieces (get rid of the woody parts at the bottom or trim the stems)
1 c. grape tomatoes, halved
1 tbsp butter
1 tbsp GF flour
2 c. half and half
1/2 tsp red pepper flakes
1 c. Feta cheese

Directions:
  1. Cook the pasta and let it drain. 
  2. Sprinkle the chicken breast with salt and pepper. Heat 1 tbsp olive oil in a skillet over medium heat and cook the chicken until golden on all sides. Remove it and let rest in a large bowl. 
  3. Add the remaining olive oil and saute the onion for 2 min. Add the garlic and bell pepper and saute for another 2 min. Toss in the broccoli and asparagus, letting them soften. Add the tomatoes last, then remove the veggie mix from heat and add it to the bowl with the chicken.
  4. Make the sauce in the same pan you cooked everything else in (save dishes!). Start by melting the butter over medium heat. Stir in the flour to create a roux.
  5. Slowly add the half and half while stirring (to prevent clumps). Sprinkle the red pepper flakes into the mix and let it come to a boil. 
  6. When the sauce begins to boil, turn off the heat and add the feta cheese. Stir until melty.
  7. Add the pasta to the sauce and stir it until all the noodles are coated.
  8. Add the veggies to the mix and enjoy!

Friday Favorites

It's Friday, and I'm looking forward to the weekend (aren't you?). In honor of this fabulous day of the week, I'm starting a series for the month of March: Friday Favorites. Each week I'll pick a few of my favorite things to share. Today I've got four:

Tieks. I know Neal gets sick of hearing me talk about these shoes, but Tieks are amazing. Not only are they incredibly well made and durable, they can easily fit in your bag AND feel like you're walking on pillows. Try them. You'll like them.

Dandies. I am a huge fan of marshmallows. I like them in hot chocolate, toasted over a fire, or just straight out of the bag. On a recent shopping trip, we picked up vanilla-flavored Dandies marshmallows instead of the Jet-Puffed variety and they blew my mind. I even packed some in my travel bag to take on a business trip. Yep, they were that good.

Mason Pearson Brush. The Mason Pearson brush is a staple in many households, but for years I skimped and bought the imitation version. The real deal is a bit of a splurge (especially for a brush), but it's a miracle worker. The natural boar bristles re-distribute oils and leave my hair shiny, voluminous, and frizz free. What more could a girl want?

Beauty Blender. This little toy was introduced to me by my makeup artist friend, Alexandra Dale. Although I tend to take it easy on foundation, the Beauty Blender is still a handy tool to have. It blends lines and leaves my skin with a flawless, airbrushed finish each morning.

Indulge at L.A. Burdick Chocolate Company



Nothing screams "quintessential winter activity" more than ice skating outside and then warming up with a hot cup of cocoa. So, this past weekend after a skate around the Frog Pond, I stopped by L.A. Burdick's for the most delicious cup of hot chocolate you could possibly imagine.

Founded in 1987 in New York City, L.A. Burdick Chocolate was inspired by the delicacies that Larry Burdick experienced while traveling in Switzerland. Five years after starting the business, he moved the chocolate shop to New Hampshire where the bonbons quickly gathered a huge following.

In Boston, you'll find locations in Back Bay and in Harvard Square. I highly recommend stopping in to try a cup of hot chocolate (I like the mix of white and dark chocolate shavings steamed into skim milk), or to sample one of their chocolate desserts. 


The chocolate mouse is one of their signature confections. A stray piece of yarn, some extra ganache, and a child's imagination dreamed up this little treat. They're almost too cute to eat!

Etiquette Q&A: Splitting the Bill

A friend recently asked me how I recommended splitting the bill when dining out with large groups. This is a question that comes up time and time again, and there are some simple ways to handle it:

Before ordering, decide as a group if you'd like one bill or separate checks. If you're on a tight budget and don't want to partake in your friend's caviar and champagne, then requesting individual bills will be the best option. However, if there will be shared dishes and bottles of wine, a single check might be preferable.

Note: When you're celebrating someone's special occasion (i.e. birthday, promotion, etc.) it's lovely to cover their portion of the bill. If you're requesting individual checks, you can simply have their tab added to yours. 

If everything is on one bill, split it evenly amongst everyone at the table. Although you might have had one less drink than the friend to your left, in the end you will spare everyone the awkwardness of splitting hairs over a few dollars.

Read the room- you know your friends and how they operate. If you know a squabble over the bill is inevitable and neither of the above tactics will work, I recommend carrying cash so that you can pay your portion and exclude yourself from the madness.

Today is Mardi Gras, which is French for "Fat Tuesday." Even if you're feasting tonight in preparation for the Lenten season that begins tomorrow, there's always time to squeeze in a little workout.

Recipe Swap: Greek Quinoa Mason Jar Salad


Today I'm swapping recipes with Jessica from The Painted Spoon.  I enjoy reading her posts about DIY projects, household organization, and fun recipes, so I was thrilled when she shared this recipe for a salad made in a mason jar!

There isn't much a mason jar can't do these days, and I love the idea of using them to pack your lunch. In addition to packing a salad, Jessica suggests toting along some fresh veggies and dip, or even creating a granola parfait to-go. The jar keeps things spill-proof and it's easy to pack in your bag!

If you're ready to our your mason jars to good use, try Jessica's recipe for greek quinoa salad. She's created a basic greek salad and added a little quinoa for extra protein. Healthy and delicious!

What You'll Need:
4 mason jars with lids
1 cup quinoa
2 cups chicken or vegetable broth
1 tablespoon chopped fresh herb of choice (Jessica used dill)
1/4 cup diced red onion
3 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
1/4 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon Dijon mustard
1 cup grape tomatoes
1/2 hothouse cucumber
1 yellow bell pepper
1/2 cup kalamata olives
5 oz feta cheese (cubed or crumbled)
1 head romaine lettuce

Directions:
  1. Combine rinsed quinoa in a saucepan with 2 cups of broth. Bring to a boil, then reduce to a simmer for 15 minutes or until the quinoa has absorbed all the broth.
  2. Turn off the heat and place a lid on the pot. Let the quinoa steam for 5 minutes before fluffing with a fork. Stir in the chopped dill and red onion. Let cool.
  3. Whisk all dressing ingredients (olive oil, red wine vinegar, oregano, salt, pepper, and dijon mustard) until well incorporated. Divide evenly between 4 mason jars. 
  4. Chop all the veggies. Layer the jars, starting with tomatoes and ending with yellow bell peppers. Placing the hardier veggies in the dressing at the bottom helps keep things crisp!
  5. Spoon in the quinoa. Add in feta cheese and olives, but make sure to leave a little room for the lettuce! Everything can be pressed down at this point to create a little bit of extra room.
  6. Top off each salad with a handful of lettuce. These mason-jar salads can be stored in the fridge for 3-4 days. Simply pour the contents into a bowl when you're ready to eat it!
