Chocolate dipped strawberries are a classic Valentine's Day treat, and they're simple to make if you know how to properly temper chocolate.
Tempering is the process of melting and cooling chocolate in a way that results in a glossy finish with the perfect snap to it. When chocolate is heated to about 115 degrees, it melts completely. However, if you cool it too quickly, the chocolate will become streaky and soft.
