Fried Chicken and Champagne

Last night we went out for a casual dinner and stumbled upon something pretty incredible at Max's Wine Dive: Gluten free fried chicken. The crispy coating on tender chicken, served with mashed potatoes and collard greens was a decadent way to end the day. Plus, it paired perfectly with G.H. Mumm Cordon Rouge.

I love the restaurant's slogan, emblazoned on the shirts of their employees:"Fried chicken and champagne... why the hell not?!" This will definitely be a repeat destination for us in Austin, but you can find Max's Wine Dive outposts in Chicago, Atlanta, Denver, and all around Texas.

I've been thinking of trying this Buttermilk Fried Chicken recipe from Martha Stewart (substituting with GF ingredients), but the chicken at Max's was so delicious that I'm not sure I want to put the effort into cooking it!

Game On


The Superbowl is just days away, but if you're not a Patriots or Seahawks fan, why not play another game while you wait for the commercials to roll?

Neal and I love a good game of Scrabble, but there's a new favorite in our house: Ticket to Ride. We received it as a gift this holiday season and it is the perfect game for small groups. There's a bit of strategy involved, but not so much that you can't socialize, snack, and engage in all the other things that make game nights fun!

Lipstick Love


I absolutely love lipstick, and MAC's lipstick in Twig is the prefect shade of nude. I get compliments on it frequently, and it's a great transitional color from winter to spring. Not too pink, not too brown, and just matte enough. Plus, it looks fabulous with a quick swipe of nude gloss!

Wedding Planning: The Menu

Food is rarely the thing that you remember about a wedding, but it is important. The first step in selecting a menu is finding the perfect caterer. When interviewing, you want to take the food into account, but experience and references are also a consideration.

Start with your venue. Are you getting married at a restaurant? If so, you likely don't need an outside caterer. If your venue doesn't have an on-site caterer, then ask if they have a list of preferred caterers. 

Explain your vision. Tell the caterer what you have in mind for your menu, and allow them to offer suggestions or options that you haven't considered. If you're not quite sure where to start, try asking some of these questions:
  • Do you specialize in a certain type of food?
  • What was the most unique menu you have created?
  • What recommendations do you have, given our wedding style?
Ask for photos or sample menus. Most caterers will share sample menus or a master menu of options that you can choose from. Seeing pictures isn't critical, but if you're serving a plated meal you'll want to see how they present the food. Similarly, you might be interested in seeing what their buffet setup is like. 

Taste the food. Many caterers will have an initial meeting, then set up a tasting once you've made some decisions about the type of food/menu you're looking to have. This is a great opportunity to make sure that you like the food, see the dishes and serving pieces they use, and ask additional questions you might have. Pay attention to:
  • How the food is served: Is this how it will be served on your big day?
  • Food temperature: If you're having a plated meal, it's likely that some dishes may come out lukewarm. Will this impact the tastiness of your menu?
  • Overall professionalism: Is this someone you trust to orchestrate one of the main parts of your wedding?
Confirm the details. Before you sign on the dotted line, ask about the number of servers, the amount of glassware they provide, whether or not linens are included, and any other details that are important to you. It's also a good idea to ask how many other events they're doing that day, and be sure to check their references!

Travel Day Looks

Monday is a travel day for most consultants, and although I'm lucky enough to have a local gig for now, I still like to travel for fun. Picking the perfect outfit for travel days can be tricky, but there are ways to look posh and polished from the beginning to end of your journey. Here are a few "rules" that I follow:
  • Wear layers. A great scarf, a long sweater, or a blazer will keep you warm on an overly air-conditioned airplane. Similarly, if you're too warm, you can always remove it!
  • Flats are your friend. Heels may look great, but if you need to run to catch a plane you'll be happy to be in shoes that allow you to move quickly. I also find that when I'm sitting for long periods of time, flats are a bit more comfortable. Extra tip: If you're taking boots with you, wear them on the plane because those take up precious real-estate in your luggage!
  • Bring a big bag. I always travel with a big tote bag that can hold my laptop, kindle, and other travel essentials. It's nice to have something that fits under the seat in front of you, but can also hold last-minute snack purchases, extra shoes, or whatever you need. 
  • Hydrate your skin. Airplanes and recirculated air tend to make skin dry, so keep your morning routine simple and layer on lots of moisturizer instead of heavy foundation. By the end of your flight, you'll still look glow and fresh.

Manage Your Time



At work, we've been talking a lot about time management techniques and ways to work smarter, not harder, so that you can accomplish your goals each day. Just for fun, I decided to take the Time Makeover Quiz by Self Magazine to learn more about my own time management skills. According to the results, I'm a Time Commander: "Time Commanders are ambitious, organized, and able to see the easiest path to getting things done, but can be hampered by perfectionism." I think this rings pretty true for me, and it's important for me to streamline and prioritize my daily tasks so that I can squeeze in a little bit of time to relax and have fun (and plan a wedding!).

I ordered an Erin Condren Life Planner on a whim, and it is the perfect way for me to consolidate my personal and professional to-do lists. I'm a huge fan of old-fashioned paper rather then electronic apps, and this paper planner is oh-so-fabulous (plus, it can be personalized!). Check it out:

Meet Up!

Moving to a new city is exciting and adventurous, but meeting friends in that new city can be a daunting task! Alex Williams wrote a great story for the New York Times called "Why is Hard to Make Friends Over 30?". The basic principle is that as we get older, our priorities change. In college, life is one big party and you meet new people frequently. As you approach your 30s, you begin to focus more on your career and home life. In other words: it gets harder to make friends as you age, especially if you're starting over in a new place!

I've been growing my social network here in Austin, and here are a few tips:
  • Make new friends, but keep the old. We used to sing a song like this in Girl Scouts, but it's true! Geographical proximity is not the most important factor in a friendship. Keep in touch with your old friends- it's exciting to hear a good friend's voice and be able to talk freely with someone who knows you well. 
  • Stay active. You're not going to meet new people when you're sitting at home catching up on your favorite TV show. Join a book club (check out options on Meetup.com), take a dance class, or volunteer your time doing something you love. The more you're out and about, the more likely it is that you'll run into your next BFF. 
  • Enjoy your own company. It might seem crazy, but sitting in a bar alone and striking up a conversation with the bartender or the person next to you can be fun and fulfilling! Get out there and be independent. 
  • Speak up. This is a hard one, but if you've met someone that might be a potential new friend, ask for their number or make plans to get together. It's a little bit like asking someone on a date, and the worst they could say is "no." If you've been having a great conversation, enjoying the same activity (like yoga, or volunteering at the local dog shelter), and you think she'd be fun to gossip with over drinks, then just say so! 
  • Make time. Great friendships take time to cultivate, so don't expect that you'll have a giant social circle overnight. When you've found a few people that you connect with, make time to hang out and get to know them more. If they invite you to do something, say "yes"! I learned early on in my adult life that if you decline an invitation a few times (even if you are legitimately busy), people stop inviting you, so make time. 
  • Be choosy. You might make plans to hang out with someone new, but then discover that you don't really enjoy their company. That's OK! Just because you're new in town doesn't mean that you have to be desperate. Perhaps they can remain an acquaintance in your network, but your time is valuable, so choose to spend it with people that make you happy. 
Once you've met a few people, you'll begin making friends of friends and your network will grow. Be patient and have fun enjoying your new surroundings along the way!

Beauty Buys: Spend vs. Splurge


I am a sucker for fancy shampoo and luxurious face products, but I don't think that every beauty product necessitates a splurge. Here are some tips for keeping your budget in check while still reaping all the beautiful benefits of spendy products:
  • Save on eye makeup remover. This isn't an expensive product anyway, but I find that the generic drugstore versions work just as well at removing mascara and eyeliner as their $25 department store counterparts. 
  • Spend on an amazing face moisturizer and/or night cream. Having well-hydrated skin will give you that coveted "glow" and it helps combat the signs of aging. I use Bobbi Brown Protective Face Lotion during the day and Hydrating Intense Night Cream while I sleep. 
  • Save on lotion and sunscreen for the rest of your body. I love Palmer's Cocoa Butter Formula, which is a steal at just $5. Similarly, generic-brand sunscreen protects just like the fancy stuff and you won't have to feel guilty about reapplying as you bask in the sun. 
  • Spend on perfume. A signature scent is so chic, and a great bottle of perfume will last for a while. Pick a scent that you absolutely love and splurge a little! 
  • Save on nail polish. I rarely do my nails at home (I'm not great with a paintbrush), but when I need a quick mani/pedi, inexpensive nail polish does the trick. 
  • Spend on a great set of brushes. I've had my Bobbi Brown brushes for over eight years, and they're in excellent condition. With a little bit of TLC and regular cleaning, well-made brushes will be more cost effective in the long run. 
  • Save on eyeshadow. I have a huge collection of Bobbi Brown eyeshadows and cosmetics, but my favorite eyeshadow is actually a purple one (pictured) from Almay. Eyeshadow doesn't have to be pricey, and an inexpensive price tag means you can add a little more variety to the colors in your cosmetics case. 
  • Spend on shampoo. Drugstore versions might work for the first few washes, but eventually sulfates and other ingredients can wreak havoc on hair. Ask your hairstylist for some recommendations, and switch it up from time to time. The bonus: with high-end shampoos and conditioners, a little bit goes a long way, so your bottles should last for a few months. 
  • Save on body wash and soap. I picked up some citrus body wash at Trader Joe's for a mere $3 and it works just like any other soap, plus it smells delightful!

Finding a Florist

Finding a florist has been one of the most stressful and exciting parts of wedding planning for me. I love flowers, and they have a big impact on the overall look and feel of the day, so I wanted to find someone who shared my vision.

Not all florists are the same, so if you're planning a big event, here's how you can find the perfect one:
  • Determine your floral style. What are your favorite flowers? Are you looking for sleek, modern arrangements, or lush garden-y centerpieces? Pinterest will be your best friend at this point. Pin everything that catches your eye, but make sure to go back and "curate" it a bit before meeting with potential florists. 
  • Gather names. Make a list of local florists and event designers. If your venue has an in-house florist, that's a great place to start! If not, most venues will have a list of preferred vendors. 
  • Check websites. Look for photos of florists' most recent work. Is it similar to what you had in mind? The pictures on their website will likely showcase the styles they're most experienced with. 
  • Make an appointment. When you've narrowed down your list to 2-3 florists, make an appointment. It's important to confirm availability for your date and understand whether or not the florist can work within your budget. 
  • Meet in person. It's a great idea to meet in person so that you can see the florist's work and express your ideas. When you go, take a list of the number of attendants, number of reception tables, style requirements, budget requirements, and any other ideas/requirements that you have. Most importantly- don't forget your Pinterest board or some pictures for inspiration!
  • Express your ideas. Event design is a creative process, so express any ideas that you have. Your ideas should be met with enthusiasm by your potential florist, and they should build on them. If you don't have a clear vision, then allow your florist/event designer to use the pictures/colors that you like and come up with a custom proposal just for you. 
  • Confirm the details. These things seem unimportant when you can be talking dahlias vs. daisies, but they will be important on your wedding day. How many people will set up at the wedding? Where do the flowers come from? Where are they stored? Does the florist handle all delivery and setup or is there an extra fee?

Cookie Monster

Martha Stewart's Ultimate Chocolate Chip Cookie

Chocolate chip cookies are a simple and delightful treat, but cookie people take sides. Do you like yours chewy or crispy? Thin & crisp cookies aren't terribly different from soft & chewy cookies- it's all in the recipe measurements!

In a bowl, mix the dry ingredients for your favorite chocolate chip cookie recipe. Here's what's in mine:
  • 2 1/4 cups GF all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp coarse salt
Beat butter and sugars in the bowl of an electric mixer until fluffy. Add in the eggs and vanilla and continue to mix until well combined.  This is the part of the recipe that will differ based on the type of cookie you want:

For Thin & Crisp Cookies
  • 2 1/2 sticks butter, softened
  • 1 1/4 cups granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract

For Soft & Chewy Cookies
  • 2 sticks butter, softened
  • 1/2 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract

For Light & Cakey Cookies
  • 1 3/4 sticks butter, softened
  • 3/4 granulated sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
Mix in the flour mixture and stir until just combined. Then add the chocolate chips (2 cups), scoop evenly onto a baking sheet, and bake for about 8 to 10 minutes at 350 degrees.

Friday Favorites: Tieks

If you know me well, you know that when I love something, I start to obsess. I've owned a few pairs of Tieks, and although they're just simple ballet flats, they are hands down my favorite shoes. Comfortable enough for traipsing around Europe for weeks at a time or running weekend errands, and foldable so you can slip into them after a long day in heels, these shoes are so versatile that you'll want them in every color!


I picked up a few new pairs this week, and the leopard print are amazing! I can't wait to pair them with a cozy cashmere sweater, some skinny jeans, and some Stella & Dot bling.

As an added bonus, Tieks come in the cutest packaging imaginable. Getting a package like this beats trying on flats at a busy shoe store:

The past several weeks have been full of wedding plans. After finding the perfect venue, we've been focused on securing all the important vendors: a caterer, a photographer, some great music, and a florist. This week the focus is on save-the-date cards. We need to get them out fast!

A Spin on Potato Skins


Potato skins are everything you want in comfort food. Crunch, salty, and topped with cheese and bacon? Yum. I love this somewhat lighter take on the bar food classic. Made with sweet potatoes instead of typical russet potatoes, these baked (not fried) skins pack an extra punch with fiber, vitamin A, and B vitamins.

What You'll Need:
4 medium sweet potatoes
1 Tbsp olive oil
1/4 cup milk
1/4 tsp salt
Ground pepper, to taste
1 cup shredded cheddar
6 strips bacon, cooked until crispy, and crumbled
Sour cream and chives for serving


Directions:
  1. Preheat oven to 400 degrees. Line a large baking sheet with parchment paper and place the potatoes on it. 
  2. Bake the potatoes for about an hour (or until cooked), then slice them in half lengthwise. 
  3. Reduce the oven temperature to 375 degrees while you scoop out the potato flesh, leaving a thin layer inside each skin.
  4. Place the potato skins back on the baking sheet face up and drizzle with olive oil. Bake for 10-15 minutes. 
  5. Mash the sweet potato flesh with the milk, salt and pepper. The mixture should be smooth and creamy.
  6. Remove the sweet potato skins from the oven and fill them with a small amount of mashed sweet potato (you won't use all of it).
  7. Top each potato skin with cheese and bake for an additional 15 minutes. This will let the cheese get melty, but if you want it bubbly and crisp I suggest putting it under the broiler for the last 3-5 minutes of cooking time. 
  8. Remove the sweet potato skins from the oven, then top with bacon, sour cream, and chopped chives. Enjoy!

Spring in My Step

The worst part about winter is that it drags on and on. I have to admit that our move south has significantly decreased my cold-weather woes, but after the holidays are over I'm always ready for spring. Enter: Stella & Dot's new Spring Line. Hopdoddy Hype

One of my goals in the New Year was to try new things, so this past weekend we braved the line and tried Hopdoddy. This burger bar gets rave reviews in the Austin area, and the South Congress location is known for the long line wrapping around the building- I was convinced that no burger could be that good!

The verdict: It was pretty amazing. Neal had a bison burger, while I went the more traditional route. We enjoyed a couple of delicious adult beverages while we waited in line and dined on fries with hatch chile queso once we had taken our seats. Although I'm not sure I'll be a regular (the line is a bit prohibitive), the food was delicious.

Perfect Pasta Sauce


On a cold night, there's nothing better than tucking into a big bowl of warm carbs! I love pasta (the gluten-free variety, of course), and this sauce is my go-to recipe. I like it because the ingredients are simple, and since it calls for wine, it's a good excuse to crack open one of your favorite bottles.

What You'll Need:
3 28oz cans petite diced tomatoes
3 Tbsp tomato paste
1/3 bottle red wine
5-6 cloves garlic, diced
2 tsp dried oregano
2 Tbsp dried parsley
Olive Oil


Directions:
  1. Swirl 3-4 Tbsp olive oil in a dutch oven or stock pot (a few turns of the pan if you'd prefer not to measure), and heat on medium/high heat. 
  2. SautĂ© the garlic in the olive oil until it becomes fragrant. Add the tomatoes and tomato paste. 
  3. Pour about 1/3 bottle of wine into the pot, then pour a glass for yourself (the most important part!). You should never cook with wine you wouldn't drink!
  4. Sprinkle the oregano and parsley in, and season with salt and pepper to taste. 
  5. Lower heat and allow the sauce to simmer for about 30 minutes. While it's cooking, make your pasta. 
The alcohol will cook off as the sauce cooks, and this sauce tastes perfect topped with a little bit of parmesan cheese! If chunky sauce isn't your thing, you can always use an immersion blender to mix it up and create a smooth texture. Enjoy!

Snap Kitchen

Weekdays get busy, and there's not always time to whip up a healthy, delicious meal at home. Enter: Snap Kitchen. A coworker of mine turned me onto this fresh, healthy take-away, and I am totally hooked!

Snap Kitchen's chefs prepare and package individual meals throughout the day, each with it's own nutritional information. You can pop into any location and pick up breakfast, lunch, dinner, or even a snack or fresh pressed juice on-the-go. Every meal is ready to heat up, and if you're shopping for the week, you can keep them for up to 5 days in the fridge.

One of the huge benefits for me is that Snap Kitchen has a huge range of gluten-free options. Have You Ever Wondered...


A dear friend of mine gave me the most delightful gift in 2014: Kate Spade's Occasions. Every occasion calls for a little something special, and this book is full of east, festive entertaining ideas!

The holidays were full of social gatherings. As you were attending each fabulous fĂȘte, perhaps you wondered...

Q: Bringing flowers or a small gift to a hostess is always a lovely gesture. Is it important to bring them to the event, or better to send them beforehand?
A: Although it takes some foresight and may seem old-fashioned, sending flowers or a small gift ahead of time will spare the hostess from last minute running around (finding a vase, putting your gift away, etc.). She'll appreciate the consideration and the extra time that she gets to spend with her guests. 

Q: You have food allergies, but don't want to call attention to yourself at the dinner table. What do you do when your host serves up a plate full of pecan-crusted salmon and you're allergic to nuts?
A: There are several degrees of allergies and food intolerances, so know what will work for you. If you can, scrape off the nuts and simply enjoy the salmon. If your allergy is quite serious, simply let your hostess know (or better yet, mention it ahead of time!). When I'm attending a party and I'm not sure what's on the menu, I typically offer to bring a gluten-free dish. That way, I'm guaranteed to be able to enjoy at least one part of the meal. 

Q: When is 'fashionably late' simply late?
A: Cocktail parties are more forgiving than a seated dinner, although once any passed appetizers have disappeared you are officially late. If you're attending a dinner, try to arrive within a 15 minute window of the suggested time- your hostess will likely have gone to lots of trouble to ensure that dinner is served on time, and your tardiness will only result in cold food.

Vegetable Enchiladas


Whether you're trying to save money or trying to eat healthier in 2015, these vegetable enchiladas are the perfect weeknight meal. They're simple to prepare, full of good-for-you ingredients, and inexpensive to make. Try them tonight!

What You'll Need:
2 Tbsp olive oil
4 cloves garlic, minced
1/2 Spanish onion, sliced thin
1 red bell Pepper, sliced thin
2 cups broccoli, steamed then chopped
1 12 oz can black beans, drained and rinsed
4 cups mozzarella (or melty white cheese of your choice!)
12 or more corn tortillas
1 jar salsa verde


Directions:
  1. Preheat the oven to 350 degrees.
  2. In a medium pan, heat the olive oil until it shimmers. Then add the garlic, onion, and bell pepper, cooking the veggies until they're soft. 
  3. Transfer the veggies to a bowl and stir in the black beans, chopped broccoli, and 2 cups of cheese. Mix well. 
  4. On a griddle, heat the tortillas until they're pliable, then place a few spoonfuls of the filling into the tortilla and roll it up.  Continue this process until you've rolled up all of your tortillas with filling.
  5. Place the rolled up enchiladas in a shallow baking dish coated with nonstick spray. 
  6. Cover the enchiladas with the salsa verde and the remaining 2 cups of cheese. 
  7. Bake for about 15 minutes or until the cheese has completely melted. 
Tip: I like to turn the broiler on for the last 3-5 minutes. It makes the cheese bubble up and get brown and crispy on top. Yum!

These enchiladas taste great served with a dollop of light sour cream, some chips and fresh salsa, or a light beer with a wedge of lime. Enjoy!

If you read my last post, you know that my first half-marathon in February. I'm not an avid runner, but training for the race has been great motivation to re-energize my workout routine.

Setting Goals


'Tis the season for New Year's resolutions. Rather than resolving to fix something about myself this year, I'm setting goals. Goals keep you focused on priorities and give you something to achieve and celebrate, while resolutions are often vague commitments that fall by the wayside come February.

Goal #1: Run a Half Marathon 
I've already started training because this is a goal that I'll (hopefully) achieve early on. I'm signed up to run the Austin Half Marathon in February, and I'm looking forward to seeing my beautiful friend Kate who has kept me motivated and will be running with me come race day. 

Goal #2: Plan an Epic Fall Vacation
Neal and I take lots of weekend trips, but we try to plan one amazing vacation each year. In 2014, this fell by the wayside since our summer and fall were consumed with plans to move from Boston to Austin. In 2015, we have the perfect opportunity to plan something incredible- we'll be honeymooning!

Goal #3: Try Something New Each Week
It's easy to get into a comfortable routine, but we're in a new city and there's so much to explore. My goal is to try something new each week: a restaurant, a yoga class, a volunteer activity- the possibilities are endless!
