Emergency Cookies

After a long run recently, I was craving something sweet but our pantry was pretty empty. I decided to use some odds and ends and whipped up some quick cookies that were healthy-ish and delicious.

What You'll Need:
1 cup nut butter (I used crunchy peanut butter, but almond butter would be great too!)
1/2 cup packed brown sugar
2 eggs
1 cup chocolate chips
1/2 cup old-fashioned rolled oats
Pinch of coarse salt

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper. 
  2. Combine all ingredients and stir until mixed. Yep, it's that easy. 
  3. Spoon even tablespoons of dough onto your prepared baking sheet, spacing the cookies about 1 inch apart. 
  4. Bake for 10 minutes, cool slightly, then enjoy!

Note that the peanut butter in this recipe replaces butter and flour, so these cookies are good, but they pale in comparison to my favorite peanut butter cup cookies. Butter makes things better, so if you're looking for a more indulgent chocolate chip recipe, click here
